~ spaghetti salad ~

My dad is Italian and I knew he would love this salad. He loves anything that contains pasta. I was right, it was a hit! I hope you try it sometime. Add other veggies if desired. I think marinated artichokes would also be great chopped up in this salad. Enjoy!

Ingredients

  • 1 pound spaghetti, prepared according to instructions
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 large sweet onion, chopped
  • 12 - green olives, chopped
  • 1 pound roma tomatoes, chopped
  • 2 tablespoons basil paste or chopped basil
  • 1/4 cup parsley paste or chopped parsley
  • 3 cloves garlic, minced
  • 3 tablespoons capers, drained
  • 3 tablespoons salad supreme seasoning
  • 1/2 teaspoon dried oregano & paprika
  • 1/4 teaspoon accent - optional
  • Pepper - and salt to taste
  • 1 teaspoon red pepper flakes - optional
  • Fresh - shredded parmesan cheese for garnish

How To Make ~ spaghetti salad ~

  • Step 1
    Mix all ingredients except pasta in a medium sized bowl and refrigerate over night or at least 6 hours.
  • Step 2
    Cook pasta, drain and mix with refrigerated dressing mixture. Garnish with Parmesan & serve as a side or as a meal. Enjoy!
