My dad is Italian and I knew he would love this salad. He loves anything that contains pasta. I was right, it was a hit! I hope you try it sometime. Add other veggies if desired. I think marinated artichokes would also be great chopped up in this salad.

  • 1 lb
    spaghetti, prepared according to instructions
  • 1/4 c
    red wine vinegar
  • 1/2 c
    olive oil
  • 1 large
    sweet onion, chopped
  • 12
    green olives, chopped
  • 1 lb
    roma tomatoes, chopped
  • 2 Tbsp
    basil paste or chopped basil
  • 1/4 c
    parsley paste or chopped parsley
  • 3 clove
    garlic, minced
  • 3 Tbsp
    capers, drained
  • 3 Tbsp
    salad supreme seasoning
  • 1/2 tsp
    dried oregano & paprika
  • 1/4 tsp
    accent - optional
  • Pepper
    and salt to taste
  • 1 tsp
    red pepper flakes - optional
  • Fresh
    shredded parmesan cheese for garnish

How to Make ~ Spaghetti Salad ~


  1. Mix all ingredients except pasta in a medium sized bowl and refrigerate over night or at least 6 hours.
  2. Cook pasta, drain and mix with refrigerated dressing mixture.

    Garnish with Parmesan & serve as a side or as a meal. Enjoy!
