Ingredients

  • 12 ounces extra-firm tofu, cut into 1/2 inch slices
  • - salt and pepper to taste
  • 8 ounces soba noodles
  • 5 ounces baby spinach
  • 1/4 cup bottled ponzu sauce
  • 6 - radishes, thinly sliced
  • - chopped peanuts

How To Make soba salad with grilled tofu

  • Step 1
    Cut extra firm tofu into 1/2 inch slices; press dry with paper towels. Season with salt & pepper. Grill on medium-high 10\-15 min. covered, turning once. Cut into bite-sized pieces.
  • Step 2
    Meanwhile cook soba noodles. Place baby spinach in colander in sink; drain hot noodles directly over spinach. Rinse with cold water; drain well.
  • Step 3
    Toss noodles, spinach, radishes and tofu with ponzu sauce. Top with chopped peanuts.
