- 12 ounces extra-firm tofu, cut into 1/2 inch slices
- - salt and pepper to taste
- 8 ounces soba noodles
- 5 ounces baby spinach
- 1/4 cup bottled ponzu sauce
- 6 - radishes, thinly sliced
- - chopped peanuts
How To Make soba salad with grilled tofu

Step 1Cut extra firm tofu into 1/2 inch slices; press dry with paper towels. Season with salt & pepper. Grill on medium-high 10\-15 min. covered, turning once. Cut into bite-sized pieces.

Step 2Meanwhile cook soba noodles. Place baby spinach in colander in sink; drain hot noodles directly over spinach. Rinse with cold water; drain well.

Step 3Toss noodles, spinach, radishes and tofu with ponzu sauce. Top with chopped peanuts.
