Ingredients

  • 12 oz
    extra-firm tofu, cut into 1/2 inch slices
  • ·
    salt and pepper to taste
  • 8 oz
    soba noodles
  • 5 oz
    baby spinach
  • 1/4 c
    bottled ponzu sauce
  • 6
    radishes, thinly sliced
  • ·
    chopped peanuts

How to Make Soba Salad with Grilled Tofu

Step-by-Step

  1. Cut extra firm tofu into 1/2 inch slices; press dry with paper towels. Season with salt & pepper. Grill on medium-high 10-15 min. covered, turning once. Cut into bite-sized pieces.
  2. Meanwhile cook soba noodles. Place baby spinach in colander in sink; drain hot noodles directly over spinach. Rinse with cold water; drain well.
  3. Toss noodles, spinach, radishes and tofu with ponzu sauce. Top with chopped peanuts.
