12 ozextra-firm tofu, cut into 1/2 inch slices

8 ozsoba noodles
5 ozbaby spinach
1/4 cbottled ponzu sauce
6radishes, thinly sliced
How to Make Soba Salad with Grilled Tofu
- Cut extra firm tofu into 1/2 inch slices; press dry with paper towels. Season with salt & pepper. Grill on medium-high 10-15 min. covered, turning once. Cut into bite-sized pieces.
- Meanwhile cook soba noodles. Place baby spinach in colander in sink; drain hot noodles directly over spinach. Rinse with cold water; drain well.
- Toss noodles, spinach, radishes and tofu with ponzu sauce. Top with chopped peanuts.
