- 12 ounces pkg. tricolor rotini
- 1 pound medium fresh shrimp, cooked and peeled
- 2 cups fresh baby spinach
- 1/3 cup pine nuts, toasted
- 1/3 cup poppy seed dressing
- 2 tablespoons balsamic vinegar
- 2 tablespoons seasoned rice vinegar

Step 1Cook pasta according to pkg. directions and drain well. In a large bowl, combine pasta, shrimp, spinach and pine nuts. In a small bowl, whisk together dressing and vinegars. Toss with pasta mixture before servings. Makes 6-8 servings.
