Ingredients
- 2 cups dry wide egg noodles, cooked and drained
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 2 - eggs, separated
- 1 1/2 cups sour cream
- 1/2 pound cooked ham, diced
- - salt and pepper, to taste
- 1/8 teaspoon ground nutmeg
- 1/2 cup grated parmesan cheese
How To Make schinkenfleckerl (ham and noodle casserole)

Step 1Preheat oven to 350F. Grease a 9x13 baking dish.

Step 2In a large saucepan, melt butter and whisk in flour until smooth. Take off heat and cool slightly.

Step 3In a medium bowl, beat egg whites until stiff peaks form.

Step 4Add the egg yolks to the cooled butter and flour mixture. Stir in sour cream, salt, pepper and nutmeg. Combine the cooked and drained noodles and sour cream mixture. Stir in ham. Gently fold in the beaten egg whites.

Step 5Put into prepared baking dish and cover with foil. Bake, covered, for 20 minutes. Remove foil, sprinkle cheese over top and cook an additional 25 minutes or until cheese starts to brown.
