This recipe came about like most of my recipe's. I had a package of rice noodles and the rest just came to me. This is one of my daughters favorite, i hope you enjoy it as much as we have.

- 1 pound salmon, skinless filet
- 1/2 package rice noodles
- 1/2 - red onion
- 1 bunch cilantro, fresh
- 1/4 cup ponzu (citrus flavored soy sauce)

How To Make salmon with rice noodles

Step 1SEASON FISH WITH SALT AND PEPPER. BAKE AT 350 FOR 30 MIN COVERED. THIS CAN BE DONE A DAY AHEAD OR YOU CAN USE CAN SALMON IF YOU HAVE THAT ON HAND. WHEN READY TO PREPARE FLAKE SALMON AND SET ASIDE.

Step 2BOIL WATER, PUT NOODLES IN WATER AFTER IT'S OFF THE BURNER UNTIL SOFT THEN DRAIN WATER.

Step 3PUT CHOPPED ONION IN HOT SKILLET WITH A LITTLE OIL ABOUT 2 TSP. IT ONLY NEEDS A MINUTE THEN ADD FLAKED SALMON AND NOODLES ALONG WITH THE PONZU. WHEN WELL TOSSED ADD CILANTRO AND TOSS ONCE MORE, SERVE RIGHT AWAY.
