Ingredients
- 2 pounds small shaped pasta, cooked, drained and cooled
- 1 pound drained fresh mozzarella balls
- 1 1/2 pounds peeled, deveined shrimp
- 1 jar roasted peppers in oil & garlic
- 1 jar premade bruschetta topping
- 2 ounces chopped kalamata olives
- 1 bottle small-italian dressing (i use my pre-made good seasons italian)
- - salt and pepper
How To Make roasted shrimp & mozzarella pasta salad

Step 1Chop roasted peppers along with garlic from jar. Chop kalamata olives. Set aside pre-heat oven to 400.

Step 2Toss peeled shrimp on olive oil and season well with salt and pepper. Roast on a cookie sheet until pink and cooked through. Cool shrimp thoroughly.

Step 3Add all ingredients to cooled pasta including the roasting juices from the shrimp. Season with salt and pepper and chill 1 hour. I usually reserve some italian dressing to refresh the salad and moisten before serving.
