  • 1 box
    rigatoni pasta, cooked
  • 1 c
    pasta water reserved,maybe more if needed
  • 1 bunch
    broccoli rapini blanched
  • 1 jar(s)
    red roasted peppers sliced
  • 4-5 clove
  • 1 c
    fresh italian parsley chopped
  • 1 c
    fresh basil leaves torn
  • 2 c
    diced fresh tomatoes
  • 2 c
    fresh grated romano cheese

How to Make Rigatoni ala Fresco


  1. Toss together all of the above ingredients but saving the fresh herbs for garnish. Grilled sliced chicken breast can be added along with fresh mozzarella cheese.
    For added flavor sprinkle with additional grated cheese too!
  2. A very good addition s a fresh tossed salad and some good crusty bread with butter.
    Don't forget the red wine,enjoy!
