quick & easy "buffalo chicken" pasta

This is a healthy, yummy, and easy pasta dish. My family said I hit a home run!!!

Ingredients

  • 2-3 pounds chicken wings ''party wings''
  • 3/4 cup hot wing sauce
  • 12 ounces no yolk noodles
  • 1 cup sweet peas
  • 1 medium carrot shaved in ribbons
  • 3 cloves garlic minced
  • 2 teaspoons onion powder
  • 1 cup fresh baby spinach chopped
  • 2 1/2 tablespoons butter
  • - extra virgin olive oil
  • 1 can tomatoes, canned italian-style and diced
  • - salt and pepper

How To Make quick & easy "buffalo chicken" pasta

  • Step 1
    First wash your wings then put them in a zip lock bag lightly salt and pepper. Next add wing sauce and shake really well. Place on pan and spread them out. ( I use aluminum foil on the bottom of my pan to keep from sticking.) Pour sauce from bag on top of wings. Cook at 425* for approximatly 25 min.

    In the Meantime prepare your garlic, spinach, carrots (I use a potato peeler to make my carrot ribbons. Start cooking your noodles the last 15 min of the chicken cook time.(Be sure to add salt to your water before cooking noodles)cook 6-8 min and drain. In skillet add noodles, butter,a good drizzle of olive oil, garlic, onion powder, salt, and pepper and mix well. Next add tomatoes, peas, carrot ribbons, and baby spinach and mix well. cook over medium heat for about 4 min. I always add a good swirl of hot wing sauce over the noodles before adding the chicken wings. Place a few chicken wings on top of the noodles to garnish. Serve with a big smile and some garlic bread:) Enjoy!!
