Adapted from several other recipes on another website, with additions suggested by several filipino cooks. If you can't find the right noodles, Vietnamese rice noodles can be subbed. In the worst scenario, use angel-hair pasta!

Ingredients
- 12 ounces package rice noodles (look for pancit or bihon on the package)
- 1 teaspoon vegetable oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bag shredded cole slaw mix (white, red cabbage with shredded carrots)
- 4 medium carrots, sliced
- 2 cups chicken broth
- 2 cups cooked chicken breast, diced
- 1 tablespoon soy sauce
- 1 cup cooked shrimp, cut into pieces
- 1/2 teaspoon red pepper flakes, or to taste
- 1/4 cup green onion, sliced
- 1-2 - lemons, quartered
How To Make quick and easy pancit

Step 1Break up and place the rice noodles in a large bowl, and cover with warm water. When soft, drain, and set aside.

Step 2Heat oil in a wok or large skillet over medium heat. Saute onion and garlic until soft. Stir in cabbage, carrots and soy sauce. Cook until cabbage begins to soften.

Step 3Add up to 2 cups broth. Add cooked chicken and shrimp. Toss in noodles, and cook until heated through, stirring constantly. Transfer pancit to a serving dish and garnish with green onion and red pepper flakes. Squeeze on some juice of the quartered lemons.
