A creamy pumpkin pasta sauce that goes great over a variety of different pastas. I ate mine with sweet potato gnocchi and loved it!

Ingredients

  • 1/2 can pure pumpkin puree
  • 3/4 can chicken stock
  • 1 tablespoon olive oil
  • 1/2 - large onion, chopped
  • 2 cloves garlic, chopped
  • 1 1/2 cups zucchini, chopped
  • 15 - basil leaves, chopped
  • 1 teaspoon dried rosemary, or use fresh
  • 1 teaspoon garlic salt
  • 1 tablespoon garam masala
  • 1 teaspoon oregano
  • 4 tablespoons half & half
  • - salt and pepper to taste
  • - pasta of choice

How To Make pumpkin pasta sauce

  • Step 1
    In a large skillet, saute onion, garlic, and zucchini in olive oil. Let cook for about 5 minutes.
  • Step 2
    Add in pumpkin puree and chicken stock. Cook for several minutes, until the stock and puree are well combined. The sauce should begin to slightly thicken.
  • Step 3
    Add in your spices, rosemary, and basil and let simmer for 15 minutes
  • Step 4
    Cook your choice of pasta on the side.
