pumpkin pasta sauce
A creamy pumpkin pasta sauce that goes great over a variety of different pastas. I ate mine with sweet potato gnocchi and loved it!

Ingredients
- 1/2 can pure pumpkin puree
- 3/4 can chicken stock
- 1 tablespoon olive oil
- 1/2 - large onion, chopped
- 2 cloves garlic, chopped
- 1 1/2 cups zucchini, chopped
- 15 - basil leaves, chopped
- 1 teaspoon dried rosemary, or use fresh
- 1 teaspoon garlic salt
- 1 tablespoon garam masala
- 1 teaspoon oregano
- 4 tablespoons half & half
- - salt and pepper to taste
- - pasta of choice
How To Make pumpkin pasta sauce

Step 1In a large skillet, saute onion, garlic, and zucchini in olive oil. Let cook for about 5 minutes.

Step 2Add in pumpkin puree and chicken stock. Cook for several minutes, until the stock and puree are well combined. The sauce should begin to slightly thicken.

Step 3Add in your spices, rosemary, and basil and let simmer for 15 minutes

Step 4Cook your choice of pasta on the side.
