I came up with this recipe looking for a way to use my canned pumpkin to create this spicy but savory sauce with a seasonal twist!

Ingredients

  • 2 Tbsp
    olive or grapeseed oil
  • 3 Tbsp
    minced garlic
  • 1 medium
    onion
  • 1 can(s)
    pumpkin, canned or cooked
  • 1 can(s)
    minced clams with juice
  • 1 1/2 tsp
    salt (or to taste)
  • 1 1/2 tsp
    shallot-pepper seasoning
  • 1 tsp
    dried sage
  • 1 tsp
    thyme, dried
  • 1 dash(es)
    cayenne pepper ( to taste)

How to Make Pumpkin Pasta Sauce

Step-by-Step

  1. Add Oil to saucepan, and heat. Add onion and garlic and cook till tender.
  2. Add minced clams and juice to pot. Let simmer 5 minutes.
  3. Stir in pumpkin, spices and salt. Simmer for 10-15 minutes till liquid reduces slightly. For a smooth sauce, blend in a pot with hand blender until desired consistency is achieved.
