  • 3 c
    penne pasta
  • 2 Tbsp
    unslated butter
  • 2 Tbsp
  • 2 c
    1% milk
  • 3/4 c
    canned pumpkin puree
  • 1 c
    reduced-fat shredded monterey jack cheese
  • 1 c
    shredded gruyere cheese
  • 1/2 c
    grated parmesan cheese
  • 1/4 tsp
  • 1/8 tsp
  • 1/8 tsp

How to Make Pumpkin mac-and-cheese


  1. Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.
  2. In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.
  3. Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
