Ingredients

  • 3 cups penne pasta
  • 2 tablespoons unslated butter
  • 2 tablespoons flour
  • 2 cups 1% milk
  • 3/4 cup canned pumpkin puree
  • 1 cup reduced-fat shredded monterey jack cheese
  • 1 cup shredded gruyere cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon pepper

How To Make pumpkin mac-and-cheese

  • Step 1
    Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.
  • Step 2
    In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.
  • Step 3
    Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
