Ingredients
- 3 cups penne pasta
- 2 tablespoons unslated butter
- 2 tablespoons flour
- 2 cups 1% milk
- 3/4 cup canned pumpkin puree
- 1 cup reduced-fat shredded monterey jack cheese
- 1 cup shredded gruyere cheese
- 1/2 cup grated parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 teaspoon pepper
How To Make pumpkin mac-and-cheese

Step 1Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.

Step 2In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.

Step 3Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
