Ingredients

3 c
penne pasta
2 Tbsp
unslated butter
2 Tbsp
flour
2 c
1% milk
3/4 c
canned pumpkin puree
1 c
reduced-fat shredded monterey jack cheese
1 c
shredded gruyere cheese
1/2 c
grated parmesan cheese
1/4 tsp
salt
1/8 tsp
nutmeg
1/8 tsp
pepper

How to Make Pumpkin mac-and-cheese

Step-by-Step

  • 1Heat oven to 375. Spray a 13" x 9" baking pan w/ cooking spray. Cook pasta as directed, drain.
  • 2In saucepan, over medium heat, melt butter. Whisk in flour. Slowly whisk in milk, cook until thickened. Add pumpkin puree and mix well. Remove from heat.
  • 3Add cheeses, salt, nutmeg and pepper. Combine sauce w/ pasta. Pour into pan. Bake, uncovered 25-30 mins, or until golden and bubbly.
