  • 1 box
    penne pasta
  • 8
    tomatoes, fresh diced
  • 1/2 cup
    basil, fresh chopped or torn
  • 8 oz
    fresh mozzarella cheese, cut into 1/2in squares
  • 3 cloves
    minced fresh garlic
  • 1/3 cup
    olive oil, extra virgin
  • 2-3 tsp
    sea salt
  • ·
    ground pepper to taste
  • ·
    red pepper flakes to taste

How to Make Penne with Fresh Mozzeralla


  1. In large pasta bowl add tomatoes and sea salt. Let sit for 10-15 minutes, the tomotoes should produce alot of juice. Next add basil and diced mozzarella. Add pepper and red pepper flakes to taste and set aside.
  2. Bring a large pot of water to a boil add penne and follow the cooking time on the box. While pasta is cooking, using a small saucepan add the olive oil and garlic, cook on med till garlic is sizzling (be carefull not to burn the garlic). When pasta is done drain and pour over tomatoes, basil and mozzarella. Then pour olive oil and garlic over pasta, toss and serve. Add parmesan and enjoy.
