Ingredients
- 1 tablespoon olive oil, extra virgin
- 1 small red onion, finely chopped
- 1 teaspoon minced garlic
- 1-1/4 pound cherry tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 ounces whole wheat penne pasta
- 4 tablespoons grated parmesan cheese, i used reduced-fat.
- 6 - fresh,thinly sliced basil leaves
How To Make penne pasta w/ tomato-red onion sauce

Step 1Heat oil in lg pot over medium heat. Add onion. Cook, stirring until softened, about 5 mins. Add garlic, cook, stirring constantly until fragrant.

Step 2Stir tomatoes, salt & pepper. Cook, stirring occasionally until tomatoes start to get soft and sauce slightly thickens. Transfer sauce to bowl and keep warm.

Step 3Wash pot and cook pasta in pot. Drain. Return pasta to pot. Add sauce, 2 tbsp grated cheese and basil. Toss to combine. Serve sprinkled w/ remaining grated cheese.
