Ingredients

1 Tbsp
olive oil, extra virgin
1 small
red onion, finely chopped
1 tsp
minced garlic
1-1/4 lb
cherry tomatoes
1/2 tsp
salt
1/4 tsp
pepper
8 oz
whole wheat penne pasta
4 Tbsp
grated parmesan cheese, i used reduced-fat.

fresh,thinly sliced basil leaves

How to Make Penne pasta w/ tomato-red onion sauce

Step-by-Step

  • 1Heat oil in lg pot over medium heat. Add onion. Cook, stirring until softened, about 5 mins. Add garlic, cook, stirring constantly until fragrant.
  • 2Stir tomatoes, salt & pepper. Cook, stirring occasionally until tomatoes start to get soft and sauce slightly thickens. Transfer sauce to bowl and keep warm.
  • 3Wash pot and cook pasta in pot. Drain. Return pasta to pot. Add sauce, 2 tbsp grated cheese and basil. Toss to combine. Serve sprinkled w/ remaining grated cheese.
