Ingredients For penne pasta w/ tomato-red onion sauce

1 Tbspolive oil, extra virgin

1 smred onion, finely chopped

1 tspminced garlic
-
1-1/4 lbcherry tomatoes

1/2 tspsalt

1/4 tsppepper

8 ozwhole wheat penne pasta

4 Tbspgrated parmesan cheese, i used reduced-fat.

6fresh,thinly sliced basil leaves
How To Make penne pasta w/ tomato-red onion sauce

1Heat oil in lg pot over medium heat. Add onion. Cook, stirring until softened, about 5 mins. Add garlic, cook, stirring constantly until fragrant.

2Stir tomatoes, salt & pepper. Cook, stirring occasionally until tomatoes start to get soft and sauce slightly thickens. Transfer sauce to bowl and keep warm.

3Wash pot and cook pasta in pot. Drain. Return pasta to pot. Add sauce, 2 tbsp grated cheese and basil. Toss to combine. Serve sprinkled w/ remaining grated cheese.
