Penne Pasta Pleasure

Colleen Sowa

Penne Pasta Pleasure.... for sure!
Pleasure to make and eat!
This is a recipe that is easy and tastes so good!

I like to put plenty of meat and vegetables in the sauce, which makes this hearty dish a bit healthier!

As usual, my grandchildren helped develop this recipe with me. They loved the finished product and want it again tomorrow!

This is a semi-homemade recipe. We used some canned and frozen ingredients to make the sauce and meatballs. This is a time saver.

Stove Top

1 large
kettle boiling water
1 - 3 tsp
sea salt
1 lb
penne pasta

1 lb
ground beef
1 large
onion (diced)
4 clove
garlic (minced fine)
4 stick
celery (chopped)
1 large
bell pepper (diced)
1 pkg
(14 ounces or more) frozen meat balls
2 can(s)
(15 ounces) diced tomatoes
2 qt
pasta sauce
1 can(s)
(10 -12 ounces) tomatoe soup
2 tsp
garlic powder
2 tsp
basil, dried

1Start browning the ground beef. Add the garlic, onion, pepper and celery. Cook until meat is browned.
2Stirring and turning.
3Don't burn, cook over medium heat.
4Add still frozen meatballs on top of other ingredients. Cooking and stirring until meatballs are thawed, browned a bit, and heated through.
5Pour diced tomatoes, tomato soup and pasta sauce into pan. Add the spices. Stirring.
6When all mixed, simmer until the pasta is cooked (about 10 minutes).
7Slice a large zucchini lengthwise, use a spoon to scrape down the middle to remove the seeds.
8Chop up the zucchini into desired size pieces.
9Add the chopped zucchini to sauce, stirring and simmering until pasta is cooked.
10While preparing the sauce, start kettle of water on high heat and bring to rolling boil. Add sea salt.
11Put penne pasta into kettle.

*** I always.... make double the pasta and cool and refrigerate for use during the week.
12Cook pasta al dente.
13Add pasta to sauce and gently stir to coat with the sauce.
14Put into bowls.

*** Garlic bread and salad are lovely with this.
