Don't let the long list of ingredients discourage you from making this great healthy dish, it's worth the effort. If you are lucky enough to be cooking side by side with a friend, one person should prepare the sauce while the other sautes the vegetables. You can easily add chicken or shrimp to make this a hearty main dish.

Ingredients For peanutty noodles

  • 1 c
    matchstick carrots
  • 1 Tbsp
    vegetable oil
  • 3 tsp
    grated peeled fresh ginger
  • 4 1/2 clove
    garlic, minced
  • 1 1/2 c
    fat free, less sodium chicken broth
  • 3/4 c
    natural style peanut butter
  • 6 Tbsp
    low sodium soy sauce
  • 4 1/2 Tbsp
    rice or white wine vinegar
  • 1 1/2 tsp
    chili garlic sauce
  • 1/4 tsp
    salt
  • 2 c
    red bell pepper strips
  • 1 lb
    snow peas, trimmed
  • 8 c
    hot cooked linguine (1 lb uncooked)

How To Make peanutty noodles

    Heat 1 teaspoon oil in a small saucepan over medium heat. Add ginger and minced garlic, saute 30 seconds. Add chicken broth and the next 5 ingredients (peanut butter through salt), stir until well blended. Reduce heat and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm.

    Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas, saute 5 minutes or until tender. Remove from heat. Combine carrots, peanut butter mixture, bell pepper mixture and linguine in a large bowl, toss well. Serve warm or at room temperature.
