If you are lucky enough to be cooking side by side with a friend, one person should prepare the sauce while the other sautes the vegetables. You can easily add chicken or shrimp to make this a hearty main dish.

1 cmatchstick carrots

1 Tbspvegetable oil

3 tspgrated peeled fresh ginger

4 1/2 clovegarlic, minced

1 1/2 cfat free, less sodium chicken broth

3/4 cnatural style peanut butter

6 Tbsplow sodium soy sauce

4 1/2 Tbsprice or white wine vinegar

1 1/2 tspchili garlic sauce

1/4 tspsalt
-
2 cred bell pepper strips
-
1 lbsnow peas, trimmed

8 chot cooked linguine (1 lb uncooked)
How To Make peanutty noodles

1Heat 1 teaspoon oil in a small saucepan over medium heat. Add ginger and minced garlic, saute 30 seconds. Add chicken broth and the next 5 ingredients (peanut butter through salt), stir until well blended. Reduce heat and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm.

2Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas, saute 5 minutes or until tender. Remove from heat. Combine carrots, peanut butter mixture, bell pepper mixture and linguine in a large bowl, toss well. Serve warm or at room temperature.
