pasta with eggplant
this is my new creation , I just made it up the other night . at my house we love eggplant . this dish has a lot of flavors . everybody in my family loved it .

Ingredients
- 1 pound penne pasta
- 1 medium eggplant
- 2 cups mozzarella cheese
- 1 cup grated parmesan cheese
- 1 package deli calamata olives chopped
- 2 medium bell peppers ,red and yellow
- - mymarinara sauce , posted in my recipe box
How To Make pasta with eggplant

Step 1make the marinara sauce ahead , it's posted here in my recipe box

Step 2chop eggplant in chunks , slice bell peppers chop calamata olives

Step 3cook pasta al dente ,in boiling water .

Step 4saute; in olive oil chopped eggplant and bell peppers in separate frying pans . add salt ,garlic powder and oregano

Step 5add chopped calamata olives , put all vegetables together in one pan, and add sauce . let it cook for few minutes at med heat .

Step 6drain pasta add to pot pasta and vegetables with sauce . add cheeses and mix well

Step 7pour the pasta with vegetable and sauce in 9x13 baking dish. sprinkle more mozzarella cheese on top

Step 8bake in preheated oven at 400 for 30minutes .

Step 9enjoy , delicious .
