Ingredients For pasta with broccoli and cauliflower

  • 12 oz
    penne pasta
  • 4 clove
    garlic, sliced
  • 2 Tbsp
    olive oil, extra virgin
  • 3 c
    broccoli florets
  • 2 c
    cauliflower florets
  • 1/2 tsp
  • 2/3 c
    low sodium vegetable or chicken broth
  • 2 Tbsp
  • 1 can
    (15 oz) cannellini beans, drained and rinsed
  • 1/4 tsp
    black pepper
  • 1/2 c
    parmigiano-reggiano cheese

How To Make pasta with broccoli and cauliflower

    Cook pasta in a large pot of salted water for 2 minutes LESS than package directions; drain.

    Cook garlic in oil in a large lidded pot over medium heat until golden, 3 to 4 minutes. Add broccoli and cauliflower and cook 1 minute. Stir in 1/4 tsp. salt, and cook, covered, 3 minutes.

    Add broth, butter, beans, pepper and remaining 1/4 tsp. salt, and cook until beans are warm and sauce thickens slightly, about 5 minutes.

    Add pasta and cook, stirring, until heated through, about 1 minute. Sprinkle with cheese.
