Ingredients
- 3 teaspoons minced garlic
- 1 - onion, chopped
- 1 - carrot, finely chopped
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 4 tablespoons olive oil, extra virgin
- 1 - 14.5 oz can whole, peeled tomatoes
- 2 cups cannellini beans, drained
- 8 ounces macaroni
- 2 tablespoons butter
- 1/4 cup grated parmesan cheese
- - salt and pepper to taste

Step 1Place oil in lg skillet over medium heat. Saute garlic, onion, carrot, parsley, basil and oregano until tender.

Step 2Add tomatoes, plus 1/4 cup of the tomato juices. Season w/ salt and pepper. Cover, simmer 10 min, stirring often until veggies are tender.

Step 3Add the beans. Simmer 20 min. Meanwhile cook pasta as directed, drain. Toss pasta w/ butter and parmesan cheese. Add pasta to bean mix and stir.
