A simple vegetarian pasta dish, but delicious!!

Ingredients

  • 3 teaspoons minced garlic
  • 1 - onion, chopped
  • 1 - carrot, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 4 tablespoons olive oil, extra virgin
  • 1 - 14.5 oz can whole, peeled tomatoes
  • 2 cups cannellini beans, drained
  • 8 ounces macaroni
  • 2 tablespoons butter
  • 1/4 cup grated parmesan cheese
  • - salt and pepper to taste

How To Make pasta fazool

  • Step 1
    Place oil in lg skillet over medium heat. Saute garlic, onion, carrot, parsley, basil and oregano until tender.
  • Step 2
    Add tomatoes, plus 1/4 cup of the tomato juices. Season w/ salt and pepper. Cover, simmer 10 min, stirring often until veggies are tender.
  • Step 3
    Add the beans. Simmer 20 min. Meanwhile cook pasta as directed, drain. Toss pasta w/ butter and parmesan cheese. Add pasta to bean mix and stir.
