Ingredients
- 3 cups pasta of your choice
- 1 tablespoon olive oil
- 3 teaspoons salt
- 2 packages (14 oz.ea.) broccoli florets
- 1/3 cup butter
- 1/3 cup all purpose flour
- 3 cups milk
- 2 1/4 cups shredded sharp cheddar cheese
- 3/4 cup shredded swiss cheese
- 1/2 teaspoon garlic powder
- 1/2 - chopped red pepper

Step 1In a large saucepan, bring 2 quarts of water to a boil with the one tablespoon of olive oil. Add 2 teaspoons salt and pasta. Wait for re-boil. Stir frequently. Cook until al dente (firm to bite). Drain.

Step 2Cook broccoli in microwave for 5 minutes. Drain any water.

Step 3In another large saucepan, melt butter; stir in flour and milk and whisk until mixture boils and thickens. Add 1-1/2 cups cheddar cheese, 3/4 cup Swiss cheese, 1 teaspoon salt, and garlic and stir until blended.

Step 4Add cooked broccoli, red pepper and drained pasta to the cheese sauce. Mix well. Spoon into a greased 9x13-inch baking dish. Cover with 3/4 cup shredded sharp cheddar cheese.

Step 5Bake uncovered in a preheated 350-degree oven for 20 minutes. Let stand 10 minutes before serving.
