pam's salmon and macaroni salad

High school recipe for Foods III, senior class. When Salmon was about the same price as Tuna. I love to play with this salad, adding other things and trying new herbs. But this is the "Original" version.

Ingredients

  • 2-3 cups cooked macaroni
  • 1 cup cucumber, chopped
  • 1- 15oz cans can salmon, flaked (remove bones and skin if desired)
  • 1 tablespoon grated onion
  • 1 tablespoon minced parsley
  • 1 tablespoon chopped fresh dill
  • 3/4 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2-4 tablespoons lemon juice
  • 1/2 to 3/4 cups chopped celery

How To Make pam's salmon and macaroni salad

  • Step 1
    Cook Macaroni as directed in salted water. Drain macaroni and cool under very cold running water. Shake as much water off as possible before making salad.
  • Step 2
    While cooking pasta, chop and prepare all other ingredients.
  • Step 3
    Combine all ingredients and toss lightly to blend.
  • Step 4
    Serve on lettuce cups and garnish with chopped parsley and /or paprika.
