Discovered roasted vegetables and researched a few recipes. Finally settled on this one and customized it to fit our tastes. We love it and crave it. So easy and flavorful. Serve with a slice of sour dough bread. Family and Friends love it and have eaten the leftovers cold.

Ingredients
- 2-3 large bell peppers. i like to use mulitple colors. cut in to chunks
- 1 - red onion cut into chunks
- 4 - garlic cloves chopped
- 1 - artichoke hearts, canned. do not drain,cut into chunks
- 12oz - smoked chicken sausage. cut into 1/4-1/2 inch slices
- 1lb - white mushrooms, washed and sliced
- 4-5 medium tomatoes, cut into chunks
- 3Tbls - olive oil
- 1 Tsp - dried oregano
- 1 Tsp - dried basil
- 2 Cups - bow-tie pasta, cooked and drained
- - shredded parmesan cheese
- - pine nuts
How To Make oven roasted veggies with chicken sausage & pasta

Step 1Preheat oven to 300 degrees Put vegetables and sausage into a large bowl. Toss with olive oil and herbs. Spread onto a large roasting pan. Roast for 1 hr to 1 hr 15 min.

Step 2While vegetables and sausage are cooking, cook the pasta. Drain pasta and toss with cooked vegetables and sausage

Step 3Spoon into bowls. Top with shredded cheese and pine nuts Enjoy
