2-3 largebell peppers. i like to use mulitple colors. cut in to chunks
1red onion cut into chunks
4garlic cloves chopped
1artichoke hearts, canned. do not drain,cut into chunks
12ozsmoked chicken sausage. cut into 1/4-1/2 inch slices
1lbwhite mushrooms, washed and sliced
4-5 mediumtomatoes, cut into chunks
1 Tspdried oregano
1 Tspdried basil
2 Cupsbow-tie pasta, cooked and drained
·shredded parmesan cheese
How to Make Oven Roasted Veggies with Chicken Sausage & Pasta
- Preheat oven to 300 degrees
Put vegetables and sausage into a large bowl.
Toss with olive oil and herbs.
Spread onto a large roasting pan.
Roast for 1 hr to 1 hr 15 min.
- While vegetables and sausage are cooking, cook the pasta.
Drain pasta and toss with cooked vegetables and sausage
- Spoon into bowls.
Top with shredded cheese and pine nuts
