Discovered roasted vegetables and researched a few recipes. Finally settled on this one and customized it to fit our tastes. We love it and crave it. So easy and flavorful. Serve with a slice of sour dough bread. Family and Friends love it and have eaten the leftovers cold.

Ingredients For oven roasted veggies with chicken sausage & pasta

2-3 lgbell peppers. i like to use mulitple colors. cut in to chunks

1red onion cut into chunks

4garlic cloves chopped

1artichoke hearts, canned. do not drain,cut into chunks

12ozsmoked chicken sausage. cut into 1/4-1/2 inch slices

1lbwhite mushrooms, washed and sliced

4-5 mdtomatoes, cut into chunks

3Tblsolive oil
-
1 Tspdried oregano
-
1 Tspdried basil
-
2 Cupsbow-tie pasta, cooked and drained

shredded parmesan cheese

pine nuts
How To Make oven roasted veggies with chicken sausage & pasta

1Preheat oven to 300 degrees Put vegetables and sausage into a large bowl. Toss with olive oil and herbs. Spread onto a large roasting pan. Roast for 1 hr to 1 hr 15 min.

2While vegetables and sausage are cooking, cook the pasta. Drain pasta and toss with cooked vegetables and sausage

3Spoon into bowls. Top with shredded cheese and pine nuts Enjoy
