I love stroganoff, but not all the fat. So, I revised an original recipe to make it healthier.

Ingredients
- 1 pound no-yolk noodles
- 1-1/2 pound angus beef stew meat, cut into strips
- 1 - onion, chopped
- 8 ounces sliced fresh mushrooms
- 1 - 10-3/4 oz can reduced-fat condensed cream of mushroom soup
- 1 cup beef broth
- 1/8 teaspoon pepper
- 1/4 teaspoon salt
- 1/2 cup light sour cream
- 2 tablespoons freeze-dried parsley
How To Make on the lighter side beef stroganoff

Step 1Cook noodles as directed, drain. Keep warm. Spray a lg skillet w/ cooking spray. Brown beef and onions over med-high heat until meat is no longer pink. Stir occasioanlly.

Step 2Add mushrooms, cook 3 min. Reduce heat to med-low. Stir in soup, broth, salt, and pepper.

Step 3Simmer 25 mins or until meat is tender. Stir in sour cream and parsley. Serve over noodles.
