I love stroganoff, but not all the fat. So, I revised an original recipe to make it healthier.

Ingredients

1 lb
no-yolk noodles
1-1/2 lb
angus beef stew meat, cut into strips
1
onion, chopped
8 oz
sliced fresh mushrooms
1
10-3/4 oz can reduced-fat condensed cream of mushroom soup
1 c
beef broth
1/8 tsp
pepper
1/4 tsp
salt
1/2 c
light sour cream
2 Tbsp
freeze-dried parsley

How to Make On the lighter side beef stroganoff

Step-by-Step

  • 1Cook noodles as directed, drain. Keep warm. Spray a lg skillet w/ cooking spray. Brown beef and onions over med-high heat until meat is no longer pink. Stir occasioanlly.
  • 2Add mushrooms, cook 3 min. Reduce heat to med-low. Stir in soup, broth, salt, and pepper.
  • 3Simmer 25 mins or until meat is tender. Stir in sour cream and parsley. Serve over noodles.
