It's a tuna melt w/out the bread, lol. Made into a casserole. One of my moms signature dishes. Comfort food at its best!

Ingredients

  • 6 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon slat
  • 1/4 teaspoon pepper
  • 3 cups 1% milk
  • 2 cups shredded swiss cheese, i used reduced-fat
  • 3 - 6 oz cans tuna, drained, flaked
  • 3 large tomatoes, cut into 1/4-thick slices.

How To Make moms easy tuna melt casserole

  • Step 1
    Heat oven to 400. Spray a 9" x 13" casserole dish w/ cooking spray. Cook pasta as directed, drain, return to pot.
  • Step 2
    In saucepan, over low heat, melt butter. Stir in flour, salt and pepper. Cook 1 min, stirring constantly. Slowly whisk in milk. Increase heat to med-high. Cook until thickened, stirring.
  • Step 3
    Remove pan from heat. stir in 1-1/2 cup cheese until melted. Add cheese sauce to macaroni. Add tuna to macaroni mix. Stir well. Transfer to casserole dish. Place tomato slices on top of casserole. Sprinkle w/ remaining cheese. Cover w/ foil. Bake 20 mins. Remove foil, bake additional 10 mins.
