mini bowtie pasta
1/3 c
kalamati greek olives, slice in 1/2
4 medium
roma tomatoes, chopped seeded or 1/2 pint grape tomatoes slicde in 1/2
1 small
red onion, chopped
1 small
english cucumber, chopped
1/2 jar(s)
16 oz
light italian dressing
3 medium
garlic loves, grated
3 Tbsp
italian parsley, chopped
2 Tbsp
herbes de provence
1 large
lemon, juice and zest
1 tsp
crushed red pepper flakes
4-5 Tbsp
extra virgin olive oil
kosher salt to taste
1/2 c
parmesan cheese

How to Make Mini Bowtie Mediterranean Salad


  • 1Cook pasta according to package. Do not over cook. Place pasta in a colander and run cold water to stop cooking. Drain well.
  • 2In a large mixing bowl, add all the ingredients except the parmesan cheese. Mix thoroughly.
  • 3Chill in fridge over night.
  • 430 minutes b4 serving, add parmesan cheese and mix well. If pastea is a little dry, add more dressing
  • 5Serve and enjoy!!!
