Mini Bowtie Mediterranean Salad

I love salads! My friends and family always request my pasta salad. This is one that I make often. Try this for your next picnic or BBQ. Happy Cooking! sw:)

1 box
mini bowtie pasta
1/3 c
kalamati greek olives, slice in 1/2
4 medium
roma tomatoes, chopped seeded or 1/2 pint grape tomatoes slicde in 1/2
1 small
red onion, chopped
1 small
english cucumber, chopped
1/2 jar(s)
16 oz
light italian dressing
3 medium
garlic loves, grated
3 Tbsp
italian parsley, chopped
2 Tbsp
herbes de provence
1 large
lemon, juice and zest
1 tsp
crushed red pepper flakes
4-5 Tbsp
extra virgin olive oil
kosher salt to taste
1/2 c
parmesan cheese


1Cook pasta according to package. Do not over cook. Place pasta in a colander and run cold water to stop cooking. Drain well.
2In a large mixing bowl, add all the ingredients except the parmesan cheese. Mix thoroughly.
3Chill in fridge over night.
430 minutes b4 serving, add parmesan cheese and mix well. If pastea is a little dry, add more dressing
5Serve and enjoy!!!
