Mexicali Lasagne (healthy!)

Ingredients

1 lbground turkey (99% lean)

1/2 tspgarlic salt

1/2 tsponion powder

1 jar(s)16 oz cilantro salsa (target has a great one)

1 1/2 cmozzarella cheese, low-fat

1 1/2 cmexican blend shredded cheese, low fat

1/2 jar(s)16 oz pineapple/peach salsa, or other fruity mexican salsa

1 can(s)diced tomatoes with garlic and onion
-
3 Tbspfresh! parsley, chopped
-
6no cook flat lasagne noodles (barilla)
How to Make Mexicali Lasagne (healthy!)
- Preheat oven to 375. Spray frying pan with Cooking spray. Brown and fully cook turkey in fry pan....
For this recipe use an 8x8 casserole (small) and you can double and use a 9x13. - Add entire jar of Cilantro Salsa, garlic powder, onion salt, and 2 tablespoons of fresh parlsey. (save the last tablespoon)
- Simmer for about 20 mins until most liquid is gone and meat is tasting like the seasoning. This is where you may want to add a bit of salt or more garlic powder. Remember, fresh parsley has a peppery taste and will make it a bit peppery.
- Layering
Start with meat sauce. Put no cook noodles on top.
Then, meat sauce again, and top with 1 cup mozzarella
Top again with no cook noodles.
Layer again with turkey meat sauce, and cover with 1/2 cup mozzarell and 1/2 cup Mexican cheese mixture.
Noodles again, and top with almost a full can of garlic and onion tomatoes and 1/2 jar fruity mexican salsa.
End with the rest of the cheese and the rest of the parsley sprinked with the cheese - Cook covered with foil for about 40- 50 minutes.
Take foil off and cook another 10-15 minutes until top is bubbly brown.
