My friend and I just love this recipe and even though my husband is not a pasta lover, he does like this particular one because it has capers in it!

Ingredients

  • 2 Tbsp
    olive oil
  • 1 medium
    red or green pepper, cut into strips
  • 1
    garlic, finely chopped
  • 1/4 c
    dry white wine
  • 8 oz
    raw small shrimp
  • 1/4 clove
    sliced ripe olives
  • 1 pkg
    linguine pasta
  • 1 (7 oz) jar(s)
    pesto with sun-dried tomatoes, slightly warmed
  • 1/4 c
    feta cheese, crumbled
  • 1 Tbsp
    capers

How to Make Mediterranean Shrimp Pasta

Step-by-Step

  1. Heat oil in large skillet. Add bell pepper and garlic; cook for 2 minutes.
  2. Add wine and shrimp; cook until shrimp are pink. Stir in olives.
  3. Prepare pasta according to package directions. Toss with pesto in medium bowl.
  4. Serve topped with shrimp mixture. Sprinkle with cheese and capers.
