One of my favorite "easy" dishes. Don't remember where I got this, probably from my mother.

Ingredients

  • 6 ounces linguine
  • - cooking spray
  • 1 cup fresh mushrooms, sliced
  • 1 - green pepper, thinly sliced
  • 1 - red pepper, thinly sliced
  • 1 clove garlic, minced
  • 1 -14 oz. can artichoke hearts, drained & quartered
  • 1/2 cup italian dressing
  • 3 tablespoons black olives, sliced
  • 1 tablespoon parsley
  • 1/2 cup (2 ozs.) shredded mozzarella cheese

How To Make mediterranean linguine

  • Step 1
    Cook linguine & keep warm. Coat a large pan with cooking spray; add mushrooms, green & red peppers & garlic; saute until tender. Add artichokes, salad dressing, olives & parsley. Stir & heat thoroughly.
  • Step 2
    Add to linguine, toss gentle. Sprinkle with mozzarella cheese.
