Mediterranean Baked Macaroni

This version of baked macaroni, also called Mqarron-al-Forn, is a specialty of Malta. Recipe adapted from Claudia Caruana.

  • 1 large
    onion, chopped
  • 2 clove
    minced garlic
  • 2 Tbsp
    olive oil
  • 1 lb
    lean ground beef, or half ground beef, half ground pork
  • 28 oz
    tomato sauce
  • 1
    bay leaf
  • 2 tsp
    dried basil
  • 1
    celery rib, diced
  • 1/2 tsp
    crushed fennel seeds
  • ·
    salt and pepper
  • 2 c
    cold water
  • 1 c
    beef stock
  • 2 large
    eggs, well beaten
  • 12 oz
    uncooked rigatoni pasta
  • 1/2 c
    grated parmesan cheese
  • 6-8 oz
    grated mozzarella cheese

How to Make Mediterranean Baked Macaroni


  1. Preheat oven to 375F.
  2. Cook pasta according to package directions and drain.
  3. In a large skillet, saute the onion and garlic in olive oil until soft; then add the meat and brown. Drain off fat.
  4. Add tomato sauce, bay leaf, basil, celery, fennel seed, salt and black pepper (to taste).
  5. Stir in water and stock, and simmer for 30-40 minutes until sauce begins to thicken. Discard bay leaf and cool sauce.
  6. Whisk the beaten eggs into the cooled sauce and stir into the cooked pasta.
  7. Place mixture in a well-greased casserole dish and top with grated Parmesan and Mozzarella cheeses.
  8. Bake for 45-60 minutes or until nicely golden.
