This version of baked macaroni, also called Mqarron-al-Forn, is a specialty of Malta. Recipe adapted from Claudia Caruana.

Ingredients

  • 1 large onion, chopped
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 1 pound lean ground beef, or half ground beef, half ground pork
  • 28 ounces tomato sauce
  • 1 - bay leaf
  • 2 teaspoons dried basil
  • 1 - celery rib, diced
  • 1/2 teaspoon crushed fennel seeds
  • - salt and pepper
  • 2 cups cold water
  • 1 cup beef stock
  • 2 large eggs, well beaten
  • 12 ounces uncooked rigatoni pasta
  • 1/2 cup grated parmesan cheese
  • 6-8 ounces grated mozzarella cheese

How To Make mediterranean baked macaroni

  • Step 1
    Preheat oven to 375F.
  • Step 2
    Cook pasta according to package directions and drain.
  • Step 3
    In a large skillet, saute the onion and garlic in olive oil until soft; then add the meat and brown. Drain off fat.
  • Step 4
    Add tomato sauce, bay leaf, basil, celery, fennel seed, salt and black pepper (to taste).
  • Step 5
    Stir in water and stock, and simmer for 30-40 minutes until sauce begins to thicken. Discard bay leaf and cool sauce.
  • Step 6
    Whisk the beaten eggs into the cooled sauce and stir into the cooked pasta.
  • Step 7
    Place mixture in a well-greased casserole dish and top with grated Parmesan and Mozzarella cheeses.
  • Step 8
    Bake for 45-60 minutes or until nicely golden.
