This version of baked macaroni, also called Mqarron-al-Forn, is a specialty of Malta. Recipe adapted from Claudia Caruana.

Ingredients
- 1 large onion, chopped
- 2 cloves minced garlic
- 2 tablespoons olive oil
- 1 pound lean ground beef, or half ground beef, half ground pork
- 28 ounces tomato sauce
- 1 - bay leaf
- 2 teaspoons dried basil
- 1 - celery rib, diced
- 1/2 teaspoon crushed fennel seeds
- - salt and pepper
- 2 cups cold water
- 1 cup beef stock
- 2 large eggs, well beaten
- 12 ounces uncooked rigatoni pasta
- 1/2 cup grated parmesan cheese
- 6-8 ounces grated mozzarella cheese
How To Make mediterranean baked macaroni

Step 1Preheat oven to 375F.

Step 2Cook pasta according to package directions and drain.

Step 3In a large skillet, saute the onion and garlic in olive oil until soft; then add the meat and brown. Drain off fat.

Step 4Add tomato sauce, bay leaf, basil, celery, fennel seed, salt and black pepper (to taste).

Step 5Stir in water and stock, and simmer for 30-40 minutes until sauce begins to thicken. Discard bay leaf and cool sauce.

Step 6Whisk the beaten eggs into the cooled sauce and stir into the cooked pasta.

Step 7Place mixture in a well-greased casserole dish and top with grated Parmesan and Mozzarella cheeses.

Step 8Bake for 45-60 minutes or until nicely golden.
