Ingredients For mediterranean baked macaroni

1 lgonion, chopped

2 cloveminced garlic

2 Tbspolive oil

1 lblean ground beef, or half ground beef, half ground pork

28 oztomato sauce

1bay leaf
-
2 tspdried basil
-
1celery rib, diced
-
1/2 tspcrushed fennel seeds

salt and pepper
-
2 ccold water
-
1 cbeef stock
-
2 lgeggs, well beaten
-
12 ozuncooked rigatoni pasta
-
1/2 cgrated parmesan cheese
-
6-8 ozgrated mozzarella cheese
How To Make mediterranean baked macaroni

1Preheat oven to 375F.

2Cook pasta according to package directions and drain.

3In a large skillet, saute the onion and garlic in olive oil until soft; then add the meat and brown. Drain off fat.

4Add tomato sauce, bay leaf, basil, celery, fennel seed, salt and black pepper (to taste).

5Stir in water and stock, and simmer for 30-40 minutes until sauce begins to thicken. Discard bay leaf and cool sauce.

6Whisk the beaten eggs into the cooled sauce and stir into the cooked pasta.

7Place mixture in a well-greased casserole dish and top with grated Parmesan and Mozzarella cheeses.

8Bake for 45-60 minutes or until nicely golden.
