This is one of those quick weeknight meals that I fall back on, especially if I have kids around. They seem to eat anything with cheese!

Ingredients

  • 8 ounces package elbow macaroni
  • 10 ounces package frozen chopped broccoli
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/4 cup grated onion
  • 3 cups milk
  • 1 1/2 cups process cheese spread (velveeta) (6 ounces)
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1 dash ground white pepper
  • 2 cups chopped cooked ham
  • 1/4 cup grated parmesan cheese

How To Make macaroni, ham and broccoli casserole

  • Step 1
    Cook the macaroni according to the package directions; drain. Set aside.
  • Step 2
    Cook the broccoli according to the package directions; drain. Set aside.
  • Step 3
    Melt the butter in a heavy saucepan over low heat; add flour and onion, stirring well. Cook for 1 minute, stirring constantly. Gradually add the milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Add the cheese spread (Velveeta), salt, mustard, and pepper; cook, stirring constantly, until the cheese melts. Remove from the heat. Add the macaroni, broccoli, and ham.
  • Step 4
    Pour the mixture into a greased 2 1/2 quart baking dish; sprinkle with the Parmesan cheese. Bake, uncovered, at 350 degrees for 25 minutes or until hot and bubbly.
