This recipe is exactly like my mom's. It reminds me of home. Comfort. Makes me relive my childhood. I hope you enjoy it as much as our family does! Feel free to mix it up a bit! Different cheese, different seasonings, bake it in a bread bowl. The possibilities are endless!

Ingredients

  • FOR THE BREAD CRUMBS
  • 8 slices bread
  • 1/2 stick butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon parsley flakes
  • FOR THE MACARONI & CHEESE
  • 1 pound noodles, uncooked
  • 1/2 stick butter, room temperature
  • 1/4 cup flour
  • 2 1/2 cups whole milk
  • 16 ounces sharp cheddar cheese
  • 2 tablespoons garlic, minced
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 2 tablespoons parsley
  • 4 teaspoons onion powder
  • 1/4 cup parmesan cheese (optional)

How To Make macaroni & cheese

  • Step 1
    Preheat the oven to 400.
  • Step 2
    Put slices of bread into food processor. Pulse several times until broken down into bread crumbs. Not a fine powder, but textured crumbs.
  • Step 3
    Melt butter in a large bowl.
  • Step 4
    Add bread crumbs and the spices and stir well until mixed.
  • Step 5
    Place large pot of salted water on stove and bring to a boil, for your noodles.
  • Step 6
    Add noodles to water once boiling, only cook until partially done.
  • Step 7
    In a large saucepan or dutch oven, melt butter, over medium heat.
  • Step 8
    Sprinkle in an equal amount of flour, whisking as you go, then continue cooking for about 5 minutes, whisking constantly.
  • Step 9
    Quickly add garlic, whisking it into the roux.
  • Step 10
    Add milk, and continue stirring, then add remaining spices and herbs, letting it simmer for 5 - 7 minute, or until thickened.
  • Step 11
    After it's thickened, turn it off, and remove from the heat, and stir in about 16 oz of sharp cheddar cheese.
  • Step 12
    Spray a 9 x 13 casserole dish or 8 ramekins with non-stick spray. Pour into a dish.
  • Step 13
    Top with the breadcrumbs and if desired, about 1/4 cup grated parmesan cheese and bake for 18 - 25 minutes.
