mac n cheese (fondue style)

Yeah, its amazing what can come out of the kitchen when I am out of my staple groceries. Here I am again, cleaning out the cupboards and the fridge. Easily serves 2 as a lunch, or 4 sides for dinner. Could use any cheese combination, I found this combo tasted amazingly like my favorite german cheese fondue.

Ingredients
- 1/2 pound penne pasta
- SAUCE
- 1/4 cup butter, melted
- 1/4 cup flour
- - salt and pepper to taste
- 1/8 teaspoon nutmeg
- 1/2 teaspoon garlic
- 1/2 cup mozzarella cheese, grated
- 1/2 cup parmesan cheese or romano cheese
- 1/2 cup sharp cheddar cheese, grated
- 1/2 cup cream cheese, room temperature
- 1/2 cup dry white wine
- - milk, enough to make it saucy (a few cups)
How To Make mac n cheese (fondue style)

Step 1Boil the pasta for 8-10 min till aldente. Drain pasta and set aside.

Step 2In a large sauce pan on med-high, melt the butter and stir in the flour. Add the spices and garlic. Stir and cook long enough for the flour to turn a light golden color.

Step 3Add the wine and the cheese quickly. Start adding the milk slowly. Whisk continuously while bringing to a boil, the whole pot will become saucy and so amazingly aromatic.

Step 4Slide pasta into the cheese sauce and stir to incorporate.
