Mac n Cheese (Fondue style)
Easily serves 2 as a lunch, or 4 sides for dinner.
Could use any cheese combination, I found this combo tasted amazingly like my favorite german cheese fondue.

1/2 lbpenne pasta
1/4 cbutter, melted
·salt and pepper to taste
1/2 cmozzarella cheese, grated
1/2 cparmesan cheese or romano cheese
1/2 csharp cheddar cheese, grated
1/2 ccream cheese, room temperature
1/2 cdry white wine
·milk, enough to make it saucy (a few cups)
How to Make Mac n Cheese (Fondue style)
- Boil the pasta for 8-10 min till aldente. Drain pasta and set aside.
- In a large sauce pan on med-high, melt the butter and stir in the flour. Add the spices and garlic. Stir and cook long enough for the flour to turn a light golden color.
- Add the wine and the cheese quickly. Start adding the milk slowly. Whisk continuously while bringing to a boil, the whole pot will become saucy and so amazingly aromatic.
- Slide pasta into the cheese sauce and stir to incorporate.
- Eat up!
