We are a diabetic family who is trying hard to watch carbs, eat healthier, and still eat what we love. Dreamfields Pasta was recommended to us, and we were skeptical (especially my husband) but it was wonderful!

Ingredients
- 1 box dreamfield pasta, elbow macaroni
- 2 cups velveeta cheese, cubed
- 1 cup kraft four cheese blend shredded cheese
- 1 teaspoon salt (more or less to taste)
- 2 tablespoons milk
- 2 tablespoons butter or margarine
How To Make mac and cheese, diabetic friendly

Step 1Preheat oven to 350 degrees

Step 2Prepare pasta according to package directions. Drain well.

Step 3In a small saucepan over medium heat, melt the Velveeta along with the salt, butter and milk.

Step 4Pour the pasta in a glass casserole dish. Pour the melted cheese mixture over the pasta and gently mix. Add 3/4 of the shredded cheese into the pasta and gently blend.

Step 5Sprinkle the remaining cheese on top of the pasta. Place in the oven and bake for 20 minutes or until the cheese on top is lightly golden. Remove from the oven and serve.
