Ingredients

  • 2 tablespoons hot hungarian paprika
  • 1 teaspoon olive oil
  • 1 pound extra-lean beaf stew meat
  • 8 ounces packaged sliced mushrooms.
  • 2 cups green bell pepper, diced
  • 1 cup onion, diced
  • 1/2 cup beef broth, reduced sodium
  • 1 - 8 oz can, tomato sauce, no-salt added
  • 1/4 teaspoon salt
  • 1 - 14 oz can beef broth
  • 1/4 cup water
  • 2 tablespoons flour
  • 12 ounces uncooked, no-yolk noodles
  • 3 tablespoons reduced-fat sour cream.

How To Make low-calorie hungarian stew

  • Step 1
    Place paprika in lg skillet, over med-high heat. Cook 2 min, stirring constantly. Remove from pan, set aside. Heat oil in same skillet. Add beef, cook until browned, stirring occasioanlly. Add mushrooms, bell pepper and onion. Saute for 4 min. Add toasted paprika, 1/2 cup broth, tomato sauce, and salt. Reduce heat to medium, and cook 6 min, stirring often. In bowl, combine 14 oz can beef broth, water and flour, whisking until smooth. Add flour mix to pan. Cover, cook 1 hr and 30 min or until slightly thickned. Stir occasionally. 15 min before stew is done, cook pasta as directed, drain. Stir sour cream into beef mix. Serve beef mix over hot noodles.
