Ingredients

1/2 lb
linguine pasta
1 Tbsp
olive oil
3 tsp
minced garlic
12 medium
shrimp, peeled, deveined
1
14.5 oz can chopped fire-roasted tomatoes.
1 Tbsp
fresh chopped basil
1/2 tsp
each, salt and pepper, or to taste
1/2 c
crumbled feta cheese. i used reduced-fat

How to Make Linguine w/ fire-roasted tomatoes and feta

Step-by-Step

  • 1Cook pasta as directed, drain, keep warm. Heat oil in lg skillet over medium heat. Add garlic, cook for 1 min. Add shrimp, cook until pink. Pour in tomatoes, stirring until heated through. Season w/ basil, salt & pepper. Toss pasta w/ sauce. Sprinkle w/ crumbled feta cheese.
