lemony salmon & rice
This is my own concoction, something I threw together when I needed something quick and a little different. To my surprise I found it was quite tasty! Sometimes I use white rice, sometimes brown, or even wild. And I may use pine nuts or slivered almonds--maybe even chopped pecans or walnuts. It's fun to experiment with this dish and it always comes out delicious!

Ingredients
- 1 package boil-n-bag rice
- 1 can (5 oz.) skinless & boneless prime fillet atlantic salmon
- 1/4 cup pine nuts or other chopped nuts
- 2 teaspoons lemon juice
- - salt & pepper to taste
How To Make lemony salmon & rice

Step 1Place one bag of rice into boiling water in a medium size pot; simmer for 10 minutes. Pour out water and empty the rice into the pot.

Step 2Add the salmon, having discarded about half of the liquid from the can. Flake salmon into rice. Add the nuts and lemon juice. Stir gently until all is mixed.

Step 3Heat about 5 more minutes, just until mixture is hot. Season with salt and pepper to taste.
