    26-oz. jars roasted red pepper pasta sauce (or your choice), divided
  • 1
    15- oz. carton ricotta cheese
  • 2 c
    mozzarella cheese, shredded
  • 1 large
    egg, lightly beaten
  • 6
    lasagna noodles, cooked and drained
  • 1 jar(s)
    12-oz. jar roasted red bell peppers, drained and chopped
  • ·
    fresh oregano, chopped
  • 1 can(s)
    14-oz. can artichoke hearts, drained, chopped and divided
  • ·
    shredded parmesan cheese

How to Make Lasagna Rollups with Artichokes and Red Pepper


  1. Layer half of the pasta sauce on the bottom of a 13 x 9 inch pan.
  2. Combine cheeses and egg - mix well. Spread mixture evenly on 1 side of each noodle; sprinkle with peppers, oregano, and half of the artichokes. Roll up beginning at the short end and cut in half.
  3. Place cut side down the rollups in a prepared pan. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake for 15 additional minutes. Heat remaining pasta sauce in a saucepan and add artichokes. Serve with rollups. Garnish with parsley or oregano.
