Ingredients
- 2 - 26-oz. jars roasted red pepper pasta sauce (or your choice), divided
- 1 - 15- oz. carton ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 large egg, lightly beaten
- 6 - lasagna noodles, cooked and drained
- 1 jar 12-oz. jar roasted red bell peppers, drained and chopped
- - fresh oregano, chopped
- 1 can 14-oz. can artichoke hearts, drained, chopped and divided
- - shredded parmesan cheese
How To Make lasagna rollups with artichokes and red pepper

Step 1Layer half of the pasta sauce on the bottom of a 13 x 9 inch pan.

Step 2Combine cheeses and egg - mix well. Spread mixture evenly on 1 side of each noodle; sprinkle with peppers, oregano, and half of the artichokes. Roll up beginning at the short end and cut in half.

Step 3Place cut side down the rollups in a prepared pan. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake for 15 additional minutes. Heat remaining pasta sauce in a saucepan and add artichokes. Serve with rollups. Garnish with parsley or oregano.
