I learned how to make this from my mother-in-law...I was told when she taught me that this is a summer sauce..In the winter it is a heavier sauce with meat...My Family loves it because it is light and and you can serve this with chicken cutlets...veal cutlets...add crabs and you have a crab sauce served over a thin pasta and a salad...

- 1/4 cup olive oil, extra virgin
- 4 cloves fresh garlic
- 2 medium chopped onions
- 1 cup italian parsley chopped
- 5 (12 oz) cans redpack whole tomatoes in thick puree
- 1/4 cup romano cheese, grated

Step 1In a 5-quart pot,heat olive oil.Add onion.garlic and parsley to brown.Add tomatoes,one can at a time,squeezing each tomatoes,add graded cheese.Bring to a boil,then cover and simmer for 2 to 3 hours...You can add crabs to this sauce about 20 minutes before shutting the sauce off...You can freeze this sauce...For myself I'm only one so I put into small containers and freeze it and then take one out when I want pasta...Serve with romano cheese
