Ingredients

  • 4 ounces spaghetti, cooked and drained
  • 1 - egg, beaten
  • 1/2 cup ricotta cheese, part-skim
  • 1/4 cup parmesan cheese
  • 3/4 cup prepared spaghetti sauce (canned or your own)
  • 1 - link sweet italian sausage, cooked and sliced
  • 1/2 cup mozzarella cheese, shredded

How To Make italian sausage "cupcakes"

  • Step 1
    Preheat oven to 350F. Coat a 6-cup standard muffin tin with non-stick cooking spray.
  • Step 2
    Combine spaghetti, egg, Parmesan and Ricotta cheese. Press into muffin cups.
  • Step 3
    Top each with 1/8 cup spaghetti sauce. Add a slice or two of sausage. Top with mozzarella cheese.
  • Step 4
    Bake for 15 minutes. Let stand for 5 minutes before serving.
