Ingredients

31 ozcanned white beans, small variety,drained and rinsed

2sprays of cooking spray

1 tspolive oil

1/8 ozfresh sage, about 3-4 leaves coarsely chopped

2cloves garlic, minced (medium)

1 1/2 lbcooked chicken sausage, italian style, cut into bite size pieces

28 ozcanned crushed tomatoes, with puree
-
1 Tbspcanned tomatoe paste, or to taste

31/2 can(s)water
-
3 can(s)canned chicken broth
-
1 tsptable salt, or to taste

3 ozuncoooked whole wheat spaghetti, broken into small pieces
How to Make ITALIAN PASTA AND BEAN SOUP WITH SAUSAGE
- Puree half of beans in a blender; set aside
- Coat bottom of a large soup pot with cooking spray. Add oil; heat over medium heat. Add sage and garlic; cook, stiring constantly, until fragrant. About 1 min. add sausage; cook, stirring, frequently, until sausage starts to brown, about 2-3 min.
- Add pureed beans, whole beans, crushed tomatoes, tomato paste, water, broth, salt and pepper to pot. Bring soup to a boil; stir in spaghetti. Continue cooking soup according to time specified by pasta manfacturer.
- Season to taste with salt and red pepper flakes.
