homemade egg noodles

Nothing is more satisfying than a dish of homemade noodles. This is my go to recipe for noodles, when making chicken and noodles. My mother made chicken and noodles every Thanksgiving and Christmas. I try to keep that tradition alive. See my recipe for Homemade Chicken and Noodles.

Ingredients For homemade egg noodles

  • 1 c
    all purpose flour
  • 1 lg
  • 2 lg
    egg yolks
  • 1 dash
    salt (optional)

How To Make homemade egg noodles

    Place flour and salt in a large mixing bowl, stir well to mix together. Note: I used my stand mixer with the dough hook.

    Make a well in center of flour, add whole egg and the 2 yolks into the well in center of flour. Stir eggs into flour until dough comes together.

    Place dough ball onto a well floured surface; knead dough a couple of times until a stiff dough forms. Roll dough out on a well floured surface to less than 1/8th of an inch. Note: I cut the dough ball in half, it makes it easier for rolling out.

    Noodles can be cut from the rolled out dough, or dough can be rolled up cigar fashion and then cut with a knife or pizza cutter. Just make sure the dough is well floured, before and after cutting. This is what will make your broth thicken up.

    Lay noodles out on newspaper for at least 2 hrs. to dry. If possible, overnight is better. Make sure there is plenty of flour on the noodles.

    When ready to cook, drop noodles in boiling water, broth or stock.
