This is my all-time favorite tuna casserole!

Ingredients

  • 2-1/2 cup uncooked ronzoni healthy harvest rotini pasta
  • 2 teaspoons olive oil
  • 1 - green bell pepper, chopped
  • 1 - red bell peppper, chopped
  • 1 medium onion, chopped
  • 8 ounces fresh sliced mushrooms
  • 2 teaspoons minced garlic
  • 1 - 10.75 oz can fa-free condensed cream of mushroom soup
  • 1 - 8 oz container lite sour cream
  • 2 ounces reduced-fat cream cheese, softened
  • 1/2 cup fat-free milk
  • 1/2 teaspoon pepper
  • 2 - cans tuna in water, drained, flaked
  • 1/2 cup reduced-fat, shredded sharp cheddar cheese
  • 2 tablespoons grated parmesan cheese
  • 12 - whole wheat crackers, crushed

How To Make healthy, delicious tuna noodle casserole.

  • Step 1
    Heat oven to 350. Spray a 13" x 9" pan w/ cooking spray. Cook pasta as directed, drain.
  • Step 2
    In lg skillet, heat oil over med-high heat. Add peppers, onion, mushrooms and garlic. Cook, stirring until veggies are tender.
  • Step 3
    Stir in soup, sour cream, cream cheese, milk and pepper. Stir until well blended. Stir in tuna, pasta and cheddar cheese. Spoon mix into pan evenly. Sprinkle w/ parmesan cheese and crushed crackers. Bake, uncovered 40 min, or until bubbly.
