Ingredients
- 2-1/2 cup uncooked ronzoni healthy harvest rotini pasta
- 2 teaspoons olive oil
- 1 - green bell pepper, chopped
- 1 - red bell peppper, chopped
- 1 medium onion, chopped
- 8 ounces fresh sliced mushrooms
- 2 teaspoons minced garlic
- 1 - 10.75 oz can fa-free condensed cream of mushroom soup
- 1 - 8 oz container lite sour cream
- 2 ounces reduced-fat cream cheese, softened
- 1/2 cup fat-free milk
- 1/2 teaspoon pepper
- 2 - cans tuna in water, drained, flaked
- 1/2 cup reduced-fat, shredded sharp cheddar cheese
- 2 tablespoons grated parmesan cheese
- 12 - whole wheat crackers, crushed
How To Make healthy, delicious tuna noodle casserole.

Step 1Heat oven to 350. Spray a 13" x 9" pan w/ cooking spray. Cook pasta as directed, drain.

Step 2In lg skillet, heat oil over med-high heat. Add peppers, onion, mushrooms and garlic. Cook, stirring until veggies are tender.

Step 3Stir in soup, sour cream, cream cheese, milk and pepper. Stir until well blended. Stir in tuna, pasta and cheddar cheese. Spoon mix into pan evenly. Sprinkle w/ parmesan cheese and crushed crackers. Bake, uncovered 40 min, or until bubbly.
