I always have left over pasta ,plus a little bit of this and that in my refrig or freezer.. Time to clear it out I say, and this is what I ended up with.. Great left over dish.. LOL But I think is is now going to be a dish to go too..

Ingredients
- 1 cup chopped red and yellow peppers
- 1/4 cup diced onion
- 2 tablespoons olive oil
- 2 cups cooked penne pasta
- 1 cup peas
- 1 cup low-sodium chicken broth
- 1 tablespoon corn starch
- 3 ounces cheddar cheese
How To Make green peas and penne pasta with light cheese sauce

Step 1Saute peppers and onion in olive oil using non-stick pan over med heat for 3-5 minutes.

Step 2Stir in pasta and peas.

Step 3Mix chicken broth and cornstarch in a microwaveable bowls safe dish.

Step 4Microwave on high for 1 minute. Stir and microwave for additional minutes or until sauce bubbles.

Step 5Add Cheese and pour over pasta and peas mixture and enjoy.
