Grilled salmon on the barbecue with a teriyaki glaze is so moist and tasty, with a hint of sweetness. Even my friends who don't care for salmon love this recipe. An orzo pasta with tomatoes, kale, onion, garlic and hint of cheese is the perfect combination for the salmon. It's blending the sweet with the salt. Super yummy and very healthy for you as well.

Ingredients

  • SALMON
  • 3-4 pounds salmon filet
  • 3 tablespoons soy sauce, low sodium
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 4 tablespoons melted butter
  • 1/4 cup dry white wine
  • 2 tablespoons lemon juice, fresh
  • ORZO PASTA
  • 2 cups orzo pasta
  • 1 large tomato, chopped
  • 2 cloves garlic, minced
  • 1/2 cup onion, chopped
  • 2 cups kale leaves (or spinach), roughly chopped
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil, extra virgin

How To Make glazed salmon with orzo pasta recipe

  • Step 1
    Rinse and pat dry the salmon filet, poke with fork several times. Place on a large sheet of greased tin foil. Fold up the sides of the foil to create a ridge, and set aside.
  • Step 2
    In a small bowl, combine the soy sauce, butter, sugar, ginger, lemon and wine. Pour over the salmon to coat. Place filet in the refrigerator for at least 30 minutes. The butter will harden. Occasionally, spoon the mixture on top of the salmon again, rubbing the butter into the meat.
  • Step 3
    When ready, grill in the foil over medium heat for about 20 minutes. You can use a fork to test the flakiness of the fish. You want it to still be very moist, so be careful not to overcook it. Remove from heat and let stand for a few minutes.
  • Step 4
    Meanwhile, cook the orzo pasta as directed on package, except, add the turmeric to the boiling water while cooking. Strain and set aside.
  • Step 5
    In a medium sauce pan, sauté the onions in about 2 tbsp olive oil for about 5 minutes. Add the garlic, tomatoes and kale, and sauté another 5 minutes.
  • Step 6
    Add the pasta and the cheese and blend well. Spoon a good portion onto a plate, cut a piece of salmon and place atop orzo, and serve.
