I created this when the garden was giving up so many great veggies. I had a pot luck to go to and threw this together. It was a hit and I make it every year.

Ingredients For gifts from the garden

1 mdonion
-
2ears fresh corn
-
1 mdzuchini
-
1 mdyellow squash
-
1 mdred bell pepper
-
1 mdgreen bell pepper
-
1 lbturkey sausage (omit for vegetarian)

1/2 lbshrimp, peeled and deveined (omit for vegetarian)

1 candiced tomatoes
-
1 cantomato soup
-
2 Tbspcajun seasoning more or less to taste

1 tsppepper
-
1 pkgbow tie pasta (veggie bows if available)

2carrots
- ADD: OKRA, BROCCOLI, OR ANY OTHER VEGGIE FROM YOUR GARDEN
How To Make gifts from the garden

1Bring a pot of water to boil and cook pasta according to package directions.

2Largely chop onion, carrots, peppers. Saute in large pan with a little butter or olive oil.

3Slice sausage into coins and add to pan. Saute until heated through and carrots are beginning to soften.

4Slice remaining veggies in bite size pieces. Slice corn from cob. Add all to pan. Stir in tomatoes and tomato soup. Add Shrimp and Cajun seasoning. Add pepper to taste.

5Simmer till veggies are just fork tender but still crisp and shrimp turns pink.

6Serve with Hawaiian sweet rolls and butter.
