I created this when the garden was giving up so many great veggies. I had a pot luck to go to and threw this together. It was a hit and I make it every year.

Ingredients For gifts from the garden

  • 1 md
    onion
  • 2
    ears fresh corn
  • 1 md
    zuchini
  • 1 md
    yellow squash
  • 1 md
    red bell pepper
  • 1 md
    green bell pepper
  • 1 lb
    turkey sausage (omit for vegetarian)
  • 1/2 lb
    shrimp, peeled and deveined (omit for vegetarian)
  • 1 can
    diced tomatoes
  • 1 can
    tomato soup
  • 2 Tbsp
    cajun seasoning more or less to taste
  • 1 tsp
    pepper
  • 1 pkg
    bow tie pasta (veggie bows if available)
  • 2
    carrots
  • ADD: OKRA, BROCCOLI, OR ANY OTHER VEGGIE FROM YOUR GARDEN

How To Make gifts from the garden

    Bring a pot of water to boil and cook pasta according to package directions.

    Largely chop onion, carrots, peppers. Saute in large pan with a little butter or olive oil.

    Slice sausage into coins and add to pan. Saute until heated through and carrots are beginning to soften.

    Slice remaining veggies in bite size pieces. Slice corn from cob. Add all to pan. Stir in tomatoes and tomato soup. Add Shrimp and Cajun seasoning. Add pepper to taste.

    Simmer till veggies are just fork tender but still crisp and shrimp turns pink.

    Serve with Hawaiian sweet rolls and butter.
