garlic & onion tomato sauce

I use whole frozen tomatoes for this recipe and under hot running water remove their "jackets" then cut into quarters in order to get more into the pot.

Ingredients

  • 2 tablespoons extra virgin olive oil -- approximately cover the bottom of the pot
  • 2 cloves garlic to taste -- chopped (i use refrigerated jar stuff)
  • 1/2 medium onion -- to taste
  • 2-3 quarts whole tomatoes -- fresh or frozen

How To Make garlic & onion tomato sauce

  • Step 1
    Lightly saute' the onion and garlic in the olive oil in a non reactive sauce pan.
  • Step 2
    Add the peeled and quartered tomatoes to fill pot to the brim, and cover.
  • Step 3
    Simmer till tomatoes are very soft. Then use a stick blender to puree the mixture. Or pour into blender in batches to puree.
  • Step 4
    Place it back on to simmer until sauce reaches your desired consistency.
  • Step 5
    Transfer into your clean hot sterilized jars for canning. Or Cool completely and quickly by submerging pot (or empty bowl that you dump the sauce into) in an ice water bath before filling your freezer containers in useable amounts for your family.
