ellen's broccoli pasta with creamy tomato sauce

It all started when I noticed that I had a fresh tomato and some fresh broccoli from the organic delivery company that I needed to use very soon. I had all the other ingredients on hand, so I threw this together and was very pleasantly surprised. It is very easy and very yummy!

Ingredients

  • 4 ounces pasta shells, tiny, uncooked
  • 1 cup broccoli florets
  • 2 1/2 cups water
  • 1 large tomato, chopped
  • 1/2 cup onion, chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 2 teaspoons olive oil
  • - salt and pepper to taste
  • - grated parmesan cheese

How To Make ellen's broccoli pasta with creamy tomato sauce

  • Step 1
    In a medium saucepan bring water to boil over high heat. Add pasta and cook over low heat about 3 to 4 minutes, stirring occasionally.
  • Step 2
    Stir in broccoli and cook for another 5 minutes, until pasta is al dente. Drain, reserving 1/2 cup of the water.
  • Step 3
    Heat oil in a medium saucepan and saute the chopped onion until translucent.
  • Step 4
    Add the chopped tomatoes, salt, pepper, and 1/2 cup of the pasta-broccoli water. Cover the saucepan and simmer for 5 minutes. Uncover, increase the heat to high, and cook for another 5 minutes, or until most of the water has evaporated.
  • Step 5
    Remove from heat and season with basil, parsley, garlic and oregano.
  • Step 6
    Stir in the cooked pasta and broccoli mixture and mix well to coat.
