eggplant in red sauce
A different taste for the usual sauce. You can also throw in zucchini if you like. I sometimes use zucchini noodles instead of pasta.

Ingredients
- 1 can tomatoes
- 1 medium eggplant
- pinch salt and pepper
- 1 small onion
- 2 tablespoons evoo
How To Make eggplant in red sauce

Step 1Sauté your onion in evoo. Take skin off eggplant and cut in cubes. Add eggplant to onions (add more evoo if needed). Throw in your can of tomatoes (blended or crushed).

Step 2Bring to a boil and let simmer until eggplant is soft. Add salt and pepper to taste.

Step 3Boil water for pasta and add your favorite pasta. When pasta is done pour your sauce over and enjoy!
