My Mom has been making this for years and I now that I am a newlywed and have a kitchen of my own, I can't wait to share the recipe with more friends and family!

Ingredients

  • 1 box tri-colored rotini pasta
  • 1 package frozen vegetables (baby corn, broccoli, carrots, snap peas, etc.)
  • 1 can artichoke hearts, diced
  • 1 jar roasted red peppers
  • 4 slices deli salami, cubed
  • 2 cups mexican blend shredded cheese
  • 1/2 bottle italian salad dressing
  • 1 jar green olives, sliced
  • 1 large tomato, chopped

How To Make easy pasta salad

  • Step 1
    Cook pasta according to box directions.
  • Step 2
    While pasta is cooking, prepare ingredients. Microwave frozen vegetables; chop and dice artichokes, roasted red peppers, olives and tomato. Cube salami. Add all vegetables and salami into large bowl. Once pasta has been strained and cooled, add to bowl. Sprinkle in shredded cheese and pour in dressing. Mix with a large spatula or spoon until evenly combined. Let chill in fridge until time to serve. Lasts in fridge for 1 week.
