This is is an easy Italian dish w/ flair!!

Ingredients

  • 1 pound penne pasta
  • 2/3 cup olive oil, divided
  • 1 pound eggplant, cut into 1/2"-pieces
  • 1 - onion, chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 2 large fresh tomtoes, chopped
  • 2 tablespoons fresh, chopped basil
  • 2 tablespoons grated parmesan cheese

How To Make easy pasta & eggplant

  • Step 1
    Cook pasta as directed, drain. Toss pasta w/ 2 tbsp of oil. In another pot, heat reamining oil over med-high heat.
  • Step 2
    Saute eggplant & onion in oil until lightly browned. Add salt, pepper, garlic powder and oregano. Saute for 5 mins.
  • Step 3
    Add tomatoes and basil. Toss gently w/ pasta until heted through. Sprinkle w/ parmesan cheese.
