Ingredients
- 1 pound penne pasta
- 2/3 cup olive oil, divided
- 1 pound eggplant, cut into 1/2"-pieces
- 1 - onion, chopped
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 2 large fresh tomtoes, chopped
- 2 tablespoons fresh, chopped basil
- 2 tablespoons grated parmesan cheese
How To Make easy pasta & eggplant

Step 1Cook pasta as directed, drain. Toss pasta w/ 2 tbsp of oil. In another pot, heat reamining oil over med-high heat.

Step 2Saute eggplant & onion in oil until lightly browned. Add salt, pepper, garlic powder and oregano. Saute for 5 mins.

Step 3Add tomatoes and basil. Toss gently w/ pasta until heted through. Sprinkle w/ parmesan cheese.
