Ingredients

  • 1 lb
    penne pasta
  • 2/3 c
    olive oil, divided
  • 1 lb
    eggplant, cut into 1/2"-pieces
  • 1
    onion, chopped
  • 3/4 tsp
    salt
  • 1/2 tsp
    pepper
  • 3/4 tsp
    garlic powder
  • 1/2 tsp
    dried oregano
  • 2 large
    fresh tomtoes, chopped
  • 2 Tbsp
    fresh, chopped basil
  • 2 Tbsp
    grated parmesan cheese

How to Make Easy pasta & eggplant

Step-by-Step

  1. Cook pasta as directed, drain. Toss pasta w/ 2 tbsp of oil. In another pot, heat reamining oil over med-high heat.
  2. Saute eggplant & onion in oil until lightly browned. Add salt, pepper, garlic powder and oregano. Saute for 5 mins.
  3. Add tomatoes and basil. Toss gently w/ pasta until heted through. Sprinkle w/ parmesan cheese.
